Celery

From celery, we use the leaves as a herb and the seeds as a spice. Both the herb and spice are very popular for cooking. For example, they are used to flavor soups and sauces. The leaf and the seeds both have different origins. Celery leaves, for example, come from Europe, it grows from Scandinavia to North Africa. Celery leaves from Verstegen come from Germany. Celery seed, on the other hand, comes from India as well as the celery seeds of Verstegen.

The characteristics of celery

Celery grows on the biennial celery plant that grows to about 1 meter high. In the second year, green to cream-colored flowers emerge and seed formation begins. The leaves are fragrant, serrated and fresh green in color. The scent is deeply aromatic. The celery seeds are small and narrow with fine ridges and have an olive green / khaki color. The scent of the seeds resembles a lemon / hay-like aroma.

Using celery in the kitchen

Celery is very popular in cooking, as a vegetable and as a herb / spice. Celery leaves are often used as a garnish, but also to flavor soups or sauces. Ground celery seed is also used as a substitute for salt. Celery salt as a sprinkle mixture is therefore known worldwide for flavoring dishes. The herb and spice can also be found in stews, tomato dishes and in spice mixes.
